I.G.T TUSCANY “STIGLIANESE II”
PRODUCTION AREA: The vineyards extend in the hilly area around Chianciano Terme.
ALTITUDE – EXPOSURE: From 500 to 530 meters above sea level with exposure to the West – South/ West.
SOIL COMPOSITION: Mixed structure basically dissolved with parts of clay.
GRAPES: 100% Sangiovese.
HARVEST: End of September and first half of October, with manual harvest.
VINIFICATION TECHNIQUE: Soft pressing and fermentation at a controlled temperature, never exceeding 28. Maceration on the skins for at least 15 days.
AGING: Elevation in small Allier oak barrels of 225 liters for at least 15 months. Aging in bottle for at least 10/12 months, in our underground cellars.
ORGANOLEPTIC NOTES: Very deep ruby red color, intense aroma with notes of spices and red berries very well fused. Full taste, soft and consistent.
MATCHING: It goes well with mature cheeses, preferring Tuscan pecorino, roast and braised.
