The under bran is a cheese that has a skin of brownish color and after a first seasoning is placed in the typical earthenware jars and covered with wheat bran to finish its maturation that is usually about a year.
The characteristic of this cheese is that it releases intense fragrances and flavors of dried fruit pleasant to the palate that balance in a balanced way the flavor and sweetness.
Like all cheeses is great in a platter of mixed cheeses and salami Bradi Toscani, to wet the whole we recommend the wines well structured.
